The corn flavor in some beers is actually a chemical called DiMethyl Sulfide (DMS). Derives from malted barley, not corn. It is present in all malt but is driven off during kilning (malthouse) and boiling (brewhouse). Very pale malts have more as they are less intensely kilned. A poor boil or a badly designed system results in more DMS in beer.
